THREE WAYS WITH COSTCO CILANTRO LIME SHRIMP

Last week I went to Costco alone and stocked up on ALL the goods! I usually go with Shannon, but he was too busy with work and when I do go with him, all he wants to do is shop for faucets, sinks, or their muffins. He is like a kid, so I end up getting distracted and forget things. Anyone else have this issue? Anyway…Here is the deal…

I hate wasting food and especially now with so much uncertainty happening, I am trying to plan ahead and make the most of what we buy, while still making healthy choices. And Costco has come such a long way over the years with providing healthy choices, especially with their prepared foods. I have a slight obsession with their rotisserie chicken. I get it every time that I go. It makes us four meals. I also always like to rotate getting their rotisserie chicken salad and cilantro lime shrimp. These are ALL great options, when you don’t feel like cooking and they are affordable. So let’s talk about the Cilantro Lime Shrimp today…

Shannon is allergic to shellfish, so ALL the shrimp for me PLEASE! What I like about this dish is that it is made of simple ingredients; it is delicious, it is affordable and makes THREE meals. It is basically made up of shrimp, olive oil, cilantro, black pepper, lime juice, black pepper, and salt. But what I really like about this, is that it is versatile and there are plenty of meals that you can make with it, without getting bored. Below are the three meals that I decided to make...A little bit of this and that, but always avocados, hot sauce, and Dak’s Spices KABOOM.  And all ingredients are from Costco, so the Costco Queen is back again with these meals…LOL!

Here is what I whipped up…

CILANTRO LIME SHRIMP NACHO SALAD

  • I cup of Cilantro Lime Shrimp

  • HEAPING handful of Food Should Taste Good Tortilla Chips

  • ½ avocado

  • Butter Lettuce, Tomatoes, and Red Onion

  • Season with Dak’s Spices KABOOM and extra hot sauce!

CILANTRO LIME SHRIMP WITH SWEET POTATO AND SALAD

  • 1 cups of Cilantro Lime Shrimp

  • 1 roasted sweet potato 

  • ½ avocado

  • Butter Lettuce, Tomatoes, and Red Onion

  • Season with Dak’s Spices KABOOM and extra hot sauce!

CILANTRO LIME SHRIMP WITH RICE AND CORN

  • 1 cups of Cilantro Lime Shrimp

  • 1 corn on the cob

  • Brown rice seasoned with garlic powder and red pepper flakes

  • Diced cherry tomatoes

  • ½ avocado

  • Season with Dak’s Spices KABOOM and extra hot sauce!

I don’t always order this when we go to Costco, but if we are there and the craving hits, it is always a good option to pick up. And now that is getting warmer FAST here, simple meals have been calling my name, plus the health benefits are also good too!
