Last year I wanted NOTHING to do with pumpkin, this year I want EVERYTHING to do with pumpkin! I think the summer heat kicked my ass so badly this year, that I am craving cooler temperatures, fall flavors, and weirdly everything pumpkin. I already picked up a pumpkin candle from TJ’s and I have saved a plethora of pumpkin recipes. In my mind I am already up on Nantucket watching the leaves change, wearing a comfy sweater, and sitting outside enjoying those cool nights. Slow down Katie…so to channel those fall flavors and feelings, let’s start making fall inspired recipes.

Pumpkin overnight oats are a fun, healthy, and easy recipe, that is versatile, delicious, and loaded with protein, healthy fats, complex carbohydrates, and fiber. It’s everything you need in a single jar. For me, I LOVE oats after a long run as it has all the nutrients to help replenish my body and also keep the “hangry pants” quiet for a good few hours. This is also a great meal prep recipe that you could make throughout the week, if you are buzzing around all the time.

I used Promix Vegan French Vanilla for this recipe, but you can use whatever protein powder you prefer. Next month, I plan on doing a FULL product review of Promix, as I have been using a lot of their products for over a month now and I am a HUGE fan. Promix Pumpkin Overnight Oats

Let’s put this beauty together…

INGREDIENTS:

  • 2x scoops Promix Vegan French Vanilla

  • ½ c oats

  • ¼ c pumpkin puree

  • ¼ c Greek yogurt

  • 1 T of chia seeds

  • ½ c milk

  • 1 tsp of DAK’s Spices Pumpkin Spice

  • 1 T nut butter

  • Toppings of choice - fruit, nuts, more nut butter

DIRECTIONS:

  1. Mix all ingredients together in a jar;

  2. Shake it UP;

  3. Let it sit in the fridge overnight;

  4. Top with additional toppings and ENJOY!

Overnight oats are definitely a recipe that is so underrated and it is one that I always forget about! You can make them ALL year round…You can make them with a plethora of ingredients…You can use protein powder, or not…You can do whatever works for you or whatever you have in your kitchen. Remember that eating well, does not need to be complicated or expensive, it can also be fun too!

What am I planning on whipping up next with pumpkin? Definitely a smoothie…Maybe muffins…I am feeling creative and trying to spice things up, so I hope you will follow along and try some new things with me too.
