Egg Salad Meal Prep

It feels like summer in Charleston and the warmer weather has me craving different foods! I love the change in seasons, the change in my workouts, and the change in my taste buds. Change is GOOD and it is good for our bodies to constantly switch things up. I love summer produce, grilling, and easy meals that come together in minutes and can be eaten any time of the day. Remember to honor your bodies changes and needs throughout the year…Listen to it, try new things (not just food, but workouts, self-care routines, etc.), and step out of your comfort zone. It is something I am always working on personally. It is making me happier and healthier and I love the results. More to come on this later…Let’s talk about food again in this blog post. A simple summer healthy recipe!

Egg salad is a recipe that is so underrated, yet it is so GOOD, versatile, easy, healthy, and perfect for Summer! Plus another added bonus is that making a batch of hard boiled eggs is great for meal prep for the week. I personally love plain hard boiled eggs as a snack…loaded with protein. Oh and we don’t even have to dive into all the nutritional benefits of eggs. Eggs for the WIN! Sorry…I got sidetracked!

I love this egg salad recipe for summer! It pairs perfectly with toasted sourdough, chips, or really crunchy crackers!

Egg Salad Meal Prep

INGREDIENTS:

  • 2x hard boiled eggs

  • Spoonful or two of Toby’s Family Foods Feta Cheese

  • Chopped red onion, tomatoes, and pickles

  • Handful of arugula

  • Season with garlic powder and red pepper flakes

  • Handful of crackers or chips of choice

DIRECTIONS:

  1. Boil the eggs to your preference of firmness;

  2. Chop everything up on a flat surface and add to your bowl;

  3. Add desired amount of Toby’s Family Foods Feta Cheese;

  4. Mix…Place in fridge…Top with arugula…Grab some chips and crackers;

  5. ENJOY!!!

**You could also have this with toast or enjoy just as a salad alone and use all the veggies in your fridge! It is a totally versatile, easy, delicious, and nourishing recipe that is perfect for Summer! Some add-ins I would suggest…Pickles, shredded carrots, dill, walnuts, or even pumpkin seeds! So many OPTIONS, so why not try them all out!
